I wish copper wasn't so expensive. If I could I'd buy a large set of at least 50-60. The seller was awesome and kept in contact with me after they got stuck in transit for such a long time. What can be said about these canales molds, they're authentic copper molds that do their job. They retain heat better than steel, aluminum, or silicone molds. They caramelize better than those as well. If it weren't for how expensive these are I would have a much larger set because 12 isn't enough as people gobble them up much quicker than you can make them.

You cant beat the right tool for the job. When making canalés, don't skimp on the correct hardware. These are not a multi-fuctional product- i.e. you really can’t expect to do anything other with these then make Canalés. Therefore you should expect the trickiness of the recipe to play a factor in how yours come out. Regardless, your chances of achieving Canalé heaven are best when you have the proper equipment. These are NOT easy to use, unless you are already pretty well versed in obscure pastry making, but still I highly recommend.

The molds are exactly what my grandmother used (only wish I had hers). They are very thick copper, beautifully turned out, and are just the perfect size--not too small and not too large. I am sure they will stand the test of time. My only issue is that I forgot to order BEESWAX and now I can't find any in time for New Year's Day dessert. Oh well, hoping that clarified butter and Pam will work for the crusty finish. It was an investment, true, but well worth it for the finished product.
